Help me out. This is my first dog. She is 10 weeks old. We have been socializing her, walking her on a leash, got her a squirrel toy that she is tearing up and barking loudly at. Do I give her a tail to play with? When? What other steps do I take and when?

At 10 weeks old just let your pup be a pup. Keep socializing your pup, work on basic commands, take her for walks in the woods. Teach her to load and all the other stuff you will be doing with her.
Pups and kids are a lot alike they have to grow up a little bit nefore tjey start doing grown up things. At this age just have fun with her. Remember to be patient and not push her to far. I don't think it would hurt nothing to play with her with a squirrel tail. Use it to tease her and hide it for her to find. In my opinion just as I said be patient and enjoy your pup.
This is just my two cents and I am sure Marc and others can give you even more advice than I have.

I have 15 week old who hunts great I have heard his bark maybe hand full of times today I got a few barks on a tree for first time I have hunted everyday for past 2 weeks but he just won't bark...

15 WEEKS? Keep hunting the pup. Still very young and will learn a lot in the woods.

took him out to check the trail cams this morning he took out and treed he followed it through three pines i was impressed it might have to do with bein attacked yesterday morning got his nose pretty good but he didnt hesitate this morning when it hit the ground

Man at that age just keep taking him to the woods and if he is treeing and running squirrels up, just don't shoot em out trill he barks treed. At thay ahe it sounds like you are gonna habe a barn burner
